Dermot has vast experience of the hospitality industry having come through the ranks at Dromoland Castle and subsequently at Castlemartyr Resort.

Head Chef – Terry Connor
Terry is a graduate of West Lancashire College in England where he studied Catering & Hospitality.
After graduation he moved from the UK to Australia for two years and then to Ireland to The Cornstore in Limerick before joining The Cloister as sous chef in 2012. He subsequently became head chef in 2015.
